Homemade Pasta Sauce
Ingredients
2 tbsp olive oil
3 garlic cloves, minced
1/4 cup onion, chopped
1/2 cup celery, chopped
2 tbsp tomato paste
1/4 cup fresh basil
1 tsp oregano
1/4 tsp salt
1/4 tsp pepper
3 cups tomatoes, I used a mix of beef, roma and cherry tomatoes
1/2 cup water
Instructions
Heat oil in a large pan under medium heat. Add onion and garlic. Sautée for about 3 minutes or until golden. Make sure it doesn't burn. Add the rest of the ingredients, turn the heat down, under low-medium heat, cook for about 15 minute, stirring occasionally. Taste and add any spices if needed. I ended up adding a pinch of salt and cayenne pepper. Remove from heat and let cool for at least 5 minutes.
Add to food processor or blender and pulse a few times. I like my sauce chunky but if you prefer a smoother texture, blend until your reach the consistency you like. Pour sauce back into the pan, add cooked spaghetti and top with basil.
