Portobello Mushroom Bowl
Ingredients
1 portobello mushroom
1/2 zucchini, sliced
1 tbsp tamari sauce
1 cup rice, cooked
1 cup shredded lettuce
1/2 avocado, mashed
handful of cilantro
2 tbsp vegenaise
1 tsp Sriracha
Instructions
Heat oil in a grilling pan under medium head and add the whole mushroom, and cook for 5 minutes. Flip mushroom, add zucchini and tamari sauce. Cook for another 5 minutes, flipping zucchini after 2-3 minutes. Remove mushroom and place on a cutting board, slice into thin or thicker pieces depending on your preference.
Mix vegenaise and sriracha in a small bowl. Add cooked rice to a bowl, then lettuce, zucchini, mushroom and avocado. Garnish with cilantro and dressing.
