Buffalo Cauliflower Salad

Ingredients

  • 2 cups cauliflower, cut into bite size pieces

  • 1/3 cup flour

  • 1/3 cup Franks Red Hot Wings "buffalo"

  • 1 tbsp vegan butter, melted

  • 3 cups packed arugula

  • 2 cups packed green leaf lettuce

  • 1/3 cup corn

  • 1/3 cup celery, chopped

  • 1/2 cup tomatoes

  • 1 avocado, sliced

Instructions

Preheat oven to 450°F. Mix flour, buffalo sauce and butter in a large bowl. Add cauliflower and mix well to coat cauliflower with sauce. Spread cauliflower onto a baking sheet lined with parchment paper. Bake for 30 minutes.

Add green leaf lettuce to a bowl, followed by arugula, corn, celery, tomatoes. Remove cauliflower from oven when done baking and let cool for a minute. Add cauliflower to bowl and top with avocado.
