Creamy Zucchini Noodles
Ingredients
2 medium sized zucchinis
2 tbsp tahini sauce
1 ripe avocado
2 tbsp pumpkin seeds
1 tbsp nutritional yeast
1/4 cup fresh basil
1/4 cup water or more, if needed
juice from 1/2 lemon
pinch of salt and pepper
1/4 cup grape or cherry tomatoes, halved
Instructions
Make noodles by using a spiralizer or spiral slicer. You can also use a potato peeler and peel the zucchini, which will make wider noodles. Set aside in a bowl while making the sauce.
Add all ingredients but tomatoes to a high speed blender or food processor and blend until smooth. Add more water if needed. Pour dressing over noodles, add tomatoes, pinch of salt and pepper.
