Buffalo Cauliflower Bites
Ingredients
1 head cauliflower, chopped into pieces
3/4 cups all purpose flour
3/4 cup water
1/4 tsp salt
3/4 cup Franks Buffalo red hot wings sauce
1 tbsp vegan butter
3/4 cup vegan mayonnaise
2 tbsp chopped chives
1 tbsp chopped dill
1 tbsp lemon juice
1 tbsp almond milk
Instructions
Preheat oven to 450°F.
Wash cauliflower and cut into bite sized pieces. Add flour, water and salt to a bowl and stir until combined. Coat cauliflower pieces with flour mixture. To distribute the mixture more evenly, add to a large container if you have one, place lid on and give it a good shake.
Add cauliflower to a greased baking sheet and spread out evenly. Bake for about 15 minutes, flipping once halfway through. While the cauliflower is in the oven, add the hot sauce and melted butter to a bowl, give it a whisk. Remove cauliflower from the oven, place in a large bowl, toss to coat with the hot sauce mixture, then place them back onto the baking sheet.
Place back in the oven and bake for another 15 minutes or until slightly browned. Add ranch ingredients to a bowl and mix until combined. Remove buffalo bites from oven when done baking and let cool for a minute. Serve with ranch dressing.
