Cheesy Angel Hair Pasta

Ingredients

  • 8 ounces angel hair pasta

  • 2 cups kale

  • 2 garlic cloves, minced

  • 1 cup unsweetened almond milk

  • 1/2 cup vegan cheese

  • grated vegan cheese, for garnish

  • 1/4 tsp salt

  • pinch of cayenne, optional

Instructions

Cook pasta according to package instructions. While cooking the pasta, add oil to a large skillet and under low heat, add garlic, salt and pinch of cayenne. Cook for 5 minutes or until golden. Add almond milk and vegan cheese to the skillet. Stir and cook under low-medium heat until the cheese is melted. 

Add kale, cook for another minute and then add pasta. Toss until pasta is coated with sauce. Garnish with vegan cheese. Serve and enjoy!
