Roasted Chickpea Salad
ingredients
One 15 oz can of Chickpeas
2 tbsp olive oil
2 tbsp nutritional yeast
1 tsp cumin
1 tsp garlic powder
1 tsp paprika powder
Pinch of salt
10 oz kale, chopped
¼ cup Follow Your Heart Mozzarella
14 cup Follow Your Heart Ranch Dressing
Juice from ½ lemon
instructions
Heat oven to 375F. Drain chickpeas. In a large bowl, combine spices, olive oil and chickpeas until coated. Transfer to a lined baking sheet. Bake for 15-20 minutes or until browned. Set aside for a few minutes to cool.
While chickpeas are baking, make kale salad. Chop kale and add to a large bowl, add lemon juice and dressing. Massage kale until coated with dressing. Add mozzarella and mix. Top with chickpeas, extra lemon juice and dressing (optional).
