Crispy Chik’n Tacos

ingredients

  • 3 Alpha Chik’n Patties 

  • 5 Tortillas, warmed and slightly browned in a pan

  • 2,5 cups cabbage, sliced thin 

    Jalapeno Ranch Dressing

  • ½ cup vegan mayonnaise

  • 2 tbsp olive oil

  • ¼ cup water

  • 1 jalapeno, stem and ribs removed

  • 1 tsp dill

  • 2 garlic cloves

  • ¼ cup cilantro

  • ¼ cup chives

  • Pinch of salt and pepper

    Pineapple Salsa

  • 1,5 cup pineapple, cored and diced

  • ¼ cup tomatoes, diced

  • 2 jalapenos, ribs and stems removed, minced

  • ¼ cup red onion, finely diced

  • Juice of 1 lime

  • 2 tbsp cilantro, chopped

  • Pinch of salt


instructions

Cook Alpha Chik’n Patties according to package instructions. Add all dressing ingredients to a blender and blend until smooth, then combine well with slaw. In a separate bowl, mix all pineapple salsa ingredients until combined. Cut patties into strips, then add strips to tortillas along with slaw and salsa. Fill each tortilla and squeeze with fresh lime juice.
