Slow Cooker Chilli
Ingredients
1 onion, diced
1 green bell pepper, diced
1 cup sweet potatoes, diced
4 garlic cloves, minced
1 can black beans, rinsed and drained
1 can kidney beans, rinsed and drained
2 cans pinto beans, rinsed and drained
3 cups crushed tomatoes
4 cups vegetable broth
1 tsp chili powder
1 tsp cumin
1 tsp smoked paprika
1/2 tsp salt
1 tbsp vegan sour cream
cilantro, for garnish
Instructions
Add all ingredients except sour cream and cilantro to a crockpot or slow cooker and stir well. Cover and cook on low for 3-4 hours. I stirred two times while it was cooking. When done cooking, top with cilantro and vegan sour cream.
